Farofa Recipe

Here’s a classic Farofa recipe, a Brazilian side dish made from toasted manioc flour (also known as cassava flour). It’s perfect to pair with Feijoada, barbecue, or even grilled meats.


Ingredients:

  • 2 tablespoons butter (or oil)

  • 1 medium onion, chopped

  • 2 garlic cloves, minced

  • 1 medium carrot, grated (optional)

  • 1/2 cup bacon, chopped (optional, but traditional)

  • 2 cups manioc flour (cassava flour, toasted)

  • Salt to taste

  • Black pepper to taste

  • Fresh parsley or chives, chopped (for garnish)

  • 1/4 cup raisins (optional, for a sweet touch)

Instructions:

  1. Cook the Bacon (if using):

    • In a large skillet, heat the butter (or oil) over medium heat. Add the chopped bacon and cook until crispy. Remove the bacon from the skillet and set aside, leaving some of the bacon fat in the pan for flavor.

  2. Sauté Onion and Garlic:

    • Add the chopped onion and minced garlic to the skillet. Sauté until the onion is soft and golden brown, about 3-5 minutes.

  3. Add Carrot (Optional):

    • If you're using grated carrot, add it to the skillet and cook for another 3 minutes, until it's slightly softened.

  4. Toast the Manioc Flour:

    • Gradually add the manioc flour to the skillet, stirring constantly to combine with the onions, garlic, and bacon. Toast the flour for about 5 minutes, stirring frequently, until it’s golden brown and fragrant.

  5. Season the Farofa:

    • Add salt and black pepper to taste. If you're using raisins, add them at this stage to give a sweet contrast to the savory flavors.

  6. Finish and Serve:

    • Stir in the cooked bacon (if used) and garnish with fresh parsley or chives. Serve the farofa warm as a side dish.


Farofa can be served as a side dish to many Brazilian meals, and it’s very customizable! You can add things like olives, eggs, or other meats for extra flavor. Enjoy this crispy, savory delight!
