Pão de Queijo Recipe

Here’s a delicious and easy recipe for Pão de Queijo, the famous Brazilian cheese bread that’s crispy on the outside and soft and cheesy on the inside.

Ingredients:
2 cups of tapioca flour (also called polvilho doce)
1 1/2 cups of whole milk
1/2 cup of butter
1 teaspoon of salt
1/2 teaspoon of baking powder (optional, for fluffier texture)
2 cups of grated Parmesan cheese (or a mix of Parmesan and mozzarella)
1/2 cup of grated cheddar cheese (optional, for extra flavor)
2 large eggs
Instructions:
Preheat the Oven:
Preheat your oven to 375°F (190°C). Grease a mini muffin tin or line it with paper liners for easy removal.
Heat the Liquid Ingredients:
In a saucepan, combine the milk, butter, and salt. Heat over medium heat until the butter melts and the milk begins to simmer. Remove from heat once it's heated through.
Mix with Tapioca Flour:
Gradually add the tapioca flour into the hot milk mixture, stirring constantly to prevent lumps. You’ll notice that the mixture will become very thick and sticky. Let it cool slightly for about 5-10 minutes.
Add the Eggs:
Once the mixture has cooled down a bit, add the eggs, one at a time, mixing until fully incorporated. The batter should be smooth and stretchy.
Add the Cheese:
Stir in the grated Parmesan cheese, cheddar cheese (if using), and any other cheeses you’d like. The cheese should be fully incorporated into the batter.
Fill the Muffin Tin:
Spoon the batter into the muffin tin, filling each cup about 3/4 of the way full. The batter is sticky, so you may want to wet your fingers slightly to help with the process.
Bake:
Bake for about 20-25 minutes, or until the tops are golden brown and the cheese bread has risen nicely.
Serve:
Allow the Pão de Queijo to cool for a few minutes before serving. They’re best enjoyed warm and fresh out of the oven!
