Cocada (Coconut candy)

Cocada is a traditional Brazilian coconut dessert that is sweet, chewy, and incredibly delicious. It comes in various variations, from a softer version, almost like a pudding, to a firmer, candy-like consistency. The recipe below makes a classic Brazilian cocada, made with shredded coconut, sugar, and condensed milk.



Ingredients:

  • 2 cups (200 g) unsweetened shredded coconut (fresh or dried)

  • 1 can (395 g) sweetened condensed milk

  • 1/2 cup (100 g) granulated sugar (optional, depending on how sweet you want it)

  • 1 tablespoon butter

  • 1/2 teaspoon vanilla extract (optional)

  • Pinch of salt

  • 1/4 cup (60 ml) water (if needed to adjust consistency)

  • Whole almonds or chopped nuts (optional, for garnish)




Instructions:

Step 1: Prepare the Coconut Mixture

  • In a large saucepan, combine the shredded coconut, condensed milk, sugar, butter, and vanilla extract (if using). Stir the ingredients well.

  • Cook the mixture over medium heat, stirring constantly to prevent it from sticking to the bottom of the pan. Keep stirring for about 10-15 minutes until the mixture thickens.


  1. As the mixture cooks, the condensed milk will begin to caramelize slightly, giving the cocada a rich, golden color. When the mixture thickens enough that it starts to pull away from the sides of the pan, you’ll know it’s ready. It should hold its shape when you scrape the spoon through the mixture.




Step 2: Set the Cocada


  • Once the mixture has thickened, remove it from the heat. If you prefer a slightly softer cocada, you can add a bit of water (1-2 tablespoons) to adjust the texture.

Optional: Add a pinch of salt to balance the sweetness and stir well.

  • Grease a baking dish or a square pan (about 8x8 inches or similar) with a bit of butter or oil. Alternatively, you can line it with parchment paper for easier removal later.

  • Pour the hot coconut mixture into the prepared pan, spreading it evenly with a spatula.





Step 3: Cool and Cut

  • Allow the cocada to cool at room temperature for about 1-2 hours, or until it becomes firm enough to cut into squares or bars.

  • Once cooled and set, cut the cocada into small squares or rectangles.



Step 4: Serve and Enjoy

  • If desired, garnish each piece with a whole almond or chopped nuts (like cashews or walnuts) on top for an extra touch of flavor and texture.

  • Serve the cocada at room temperature. It’s a perfect treat for a Brazilian-themed gathering, as a snack, or a dessert to enjoy with a cup of coffee or tea.



Notes:

  • Soft or Firm Cocada: The longer you cook the mixture, the firmer it will be once it cools. For a softer version, cook the mixture for less time.

  • Coconut Variations: You can use sweetened shredded coconut if you prefer a sweeter cocada, or mix it with other types of dried fruits or nuts for variation.

  • Coconut Milk: Some versions use a bit of coconut milk instead of water to give it a richer flavor.
