Cochinha de galinha (Chicken Crockett)

Coxinha de galinha is a popular Brazilian snack made from shredded chicken wrapped in a dough that is shaped like a teardrop. The dough is typically made with wheat flour, butter, and chicken broth or milk giving it a rich flavor. After the filling inside, the coxinha is usually breaded and deep-fried until golden brown, resulting in a crispy exterior. This delicious treat is often enjoyed at parties, celebrations, or as a street food delicacy.

What you will need to make this recipe :

INGREDIENTS:
Filling:

1 1/2 pound of boneless skinless chicken breast
2 chicken bouillons
1 onion (medium)
3 cloves garlic
Canola oil (about 2 tablespoons)
Sazon with Coriander & Annatto (2 packets)
Black pepper & Cumin to taste
4 oz cream cheese (Brazilian cream cheese preferable)
Fresh Parsley (about 2 tbs)
Dough:

Flour (about 3 cups)
Milk (5 cups) (could be substitute with chicken broth)
FILLING:
Place the chicken breast in a large pot with 2 chicken bouillon.
Add water to cover the chicken.
cook through for about 15 to 20 minutes.

Set chicken aside to cool down

Shred the chicken into small pieces using fork or food processor

Reserve.
Finely chop Onion, Garlic and Parsley

Sauté onion and garlic in 2 tbsp of oil until golden

Add shred chicken and stir until everything is well mixed
Lower the heat, add Sazon, sprinkle black pepper and Cumin to taste
Stir until everything is well mixed
Remove from heat and add the Cream cheese and chopped Parsley
Set aside

DOUGH:

Bring 3 cups of Milk to an almost boil point
Add Butter, Chicken Bouillon and Parsley
Mix well

( Make it sure to wait for butter and chicken bouillon is completely melted / dissolved )
Gradually stir 3 to 3 1/2 cups of flour
Stir for about 2 minutes
The dough will become stiff

Remove from heat
Place the dough in another container
Cover the dough with a kitchen cloth and let sit until is warm to shape the coxinhas
SET UP YOUR WORKING AREA

Massage the dough for about 1 minute
Take a golfball sized piece of the dough (about 2 tbsp)
Press the dough making a bowl shape
Place a small amount of the filling inside (about 1 tsp)
Fold the dough making a drumstick shape
Coat with breadcrumbs

Deep fry until golden brown
